From 2021 to 2023, Leanna McCalla studied Patisserie and Confectionary at 91ÌÒÉ«, laying the foundations for a rapidly developing career in culinary arts. During her time at 91ÌÒÉ«, Leanna developed both technical expertise and creative flair, coupled with the determination and resilience needed to thrive in the fast-paced food industry.
Memories of college remain close to her heart – from light-hearted jokes about her delivering food on a bike around London, to the focused encouragement she received during exams. Following her studies, Leanna progressed into a dynamic role at the Hilton Hotel, gaining valuable experience in food and beverage service and honing her skills as a chef. She then began working at the iconic Dorchester Hotel, where she prepared dishes of the highest calibre and built a deep appreciation for the discipline and creativity required in professional kitchens.
Leanna returned to the USA last year, reuniting with family in Florida where she began receiving regular commissions from a local bakery. Shortly after, she entered her strawberry cake in the greatest baker competition sponsored by the world-famous baker, Buddy Valastro, placing second in the quarter finals. This led to Leanna securing a publishing deal for an upcoming book – a labour of love that combines her passion for food with stories from her upbringing in London.
The book – entitled Sweetness in Every Bite: It’s Not Just a Job, It’s a Passion – is due for publication later this year, featuring detailed recipes for fourteen sweet treats, reflections on her life with her grandparents in the UK, and insights into her growth as a young chef. As well as recipes, the book contains photos and descriptions of another ten dishes that she prepared while working at the Dorchester.
Leeana said: “I love being in the kitchen, and working with people who have a different background, language and culture, but share the same passion and goals… there’s nothing that compares to being creative and putting a smile on a diner’s face.”
Her commitment to her craft and her joy in sharing food with others extends beyond the page. She is also building her YouTube channel, , where she shares recipes, kitchen tips, and behind-the-scenes moments from her culinary life.
She added: “The support I received at 91ÌÒÉ« was incredible. My teachers, such as Yvan, not only taught me the skills I needed, they believed in me – even when I doubted myself. That belief pushed me to keep going, to try new things, and to trust in my abilities. I haven’t forgotten their encouragement. It helped shape who I am.”
